06 marks our first ever release from Mexico. Produced by arguably the best producer in Mexico. This Ancafe 14 varietal goes under a very rare process called black honey. This is where a certain amount of mucilage is left on the seed from the cherry whilst producing. This creates an enourmous amount of sweetness whilst attaining clarity.
historically we have avoided mexico as the quality doesnt always back up the price. |This being an exception.
Big sweet berries fill the cup and passionfruit enters as it cools. This cup benifits largely from cooling. It allows all the sweetness to settle and the tropical acidity to drift in.
This seasonal lot is incredibly small so it likely won’t stick aorund too long.
